CANADÁ: PRESENCIA CRISTOBALINA EN “XXIX CONGRESO INTERAMERICANO DE INGENIERÍA QUÍMICA"


Del 28 al 31 de octubre del presente se lleva acabo en Toronto - Canadá el "XXIX CONGRESO INTERAMERICANO DE INGENIERÍA QUÍMICA", evento que cuenta con la participación del Ing. CIPRIANO MENDOZA docente la FIQM - UNSCH que expondrá el tema "Modelamiento matemático del proceso de secado rápido de la quinua".


Mathematical model of the flash drying quinoa (Chenopodium quinoa Willd) process.

ABSTRAC.
Quinoa has been selected by FAO as one of the crops destined to offer food security in the next century for being a product highly nutritious food product, with an outstanding protein quality and a high content of a range vitamins and minerals. The article presents a mathematical model of the instant drying process, applied to the particular case of the drying of the unsaponified wet quinoa grains. The behaviour of the model is phenomenological in nature and it includes the three mechanism of momentum, heat and mass transfer between the gas and solid phases. For the model formulation assumptions are made, quinoa is considered as spherical subject to friction forces and heat and mass transfer coefficients. The set of non-linear differential equations is solved numerically and profiles of velocity, temperature, humidity along the length of the dryer are calculated. The effect of particle size on the final moisture results has been studied. The model is very useful to study the length required to reach the desired humidity and for design purposes and to analyse the behaviour of the dryer. With the results of the model, an experimental flash dryer equipment has been built to dry quinoa with an initial surface humidity of less than 20% wet base moisture to achieve a final humidity of less than 12% that international market demands. Hot air was used as a drying agent with an initial temperature of 100oC.
